Cheddar bacon cauliflower mash

I planned to make mashed cauliflower last week and it turned into leftover night. I'll never complain about leftover night because there isn't anything more easy. I forgot about the two heads of cauliflower in the crisper drawer though. Does anyone else hate those drawers? I forget about food in them all the time. Is there a real purpose to them? Maybe this is just a me problem. The cauliflower had definitely seen better days but I hate throwing food out. I shaved a ton of questionable areas off and went with it.

I kind of threw this recipe together on the spot with anything that made sense and sounded yummy at the time and now my new favorite. Scot had a bite while he was waiting for the pork tenderloin to finish. And completely unsolicited said "Wow. That is better than some real mashed potatoes I've had." I take that as one of the highest compliments because potatoes might actually be my favorite foods. I could probably live on them alone if there were no repercussions. But I do need to watch my starchy carbs- so tonight, cauliflower it is. Seriously though- they were excellent. And I cooked both heads- so I can happily eat leftovers for lunch the next few days.

Fiesta Tortilla Soup

I woke up to howling wind this morning. Which was kind of a bummer because we were planning a day walking on the beach with the hound. With the frosty wind ripping right through our clothes we only last about 15 minutes. But at least the hound got some fresh air. 
So we decided to warm up with this gem. I use the term "we" loosely- as it was actually all Scot's idea. It's literally a party in your mouth and exactly what we needed.

This recipe calls for 4-6 cups of  shredded chicken. I have the hardest time cooking chicken. When it's up to me I grab a rotisserie chicken. But Scot makes perfect chicken. He promises it's really easy and just seasons the chicken, bakes it at 350 degrees for 30 minutes and then pulls it apart after it cools. 

The ingredients list on this one is kind of lengthy- but most of it was things we already have on hand. I was super excited avocados were on sale today. On sale in Kodiak is $2.99 each as apposed to $4.99. I know. It would probably still be worth it for this recipe though- it bursts with so much flavor. ​
